Tortellini & Mozz salad

   This is a quick, easy recipe that could easily last for dinners for the whole week! My mom and I make this every so often when I am at home.

   Here’s what you will need: one block of soft mozzarella cheese, one red pepper, one green pepper, two tomatoes, balsamic vinaigrette salad dressing and one bag of whole wheat tortellinis.

   I buy the tortellinis from Wegman’s because they have them in the refrigerated section–this means they take less time to cook because they aren’t frozen.

   I also made the mistake of buying the wrong kind of mozzarella cheese–I bought the baking kind that is rolled instead of the block kind, but it still turned out fine.

   To start, boil water for the tortellinis. Once the water is boiling, the tortellinis only have to be in there until they rise, which is usually about 4-5 minutes.

   While the tortellinis are cooking, chop up the tomatoes, peppers, and cheese and throw them in a bowl with balsamic vinaigrette. You should only need 2-3 tablespoons of the dressing, but eyeballing is best.

   And it’s done! Like I said, this is a very quick and easy recipe that could easily last for four meals. It is one of my favorite fallbacks because even if you are missing an ingredient, you can still make the salad. (The only necessary ingredient is the balsamic vinaigrette for mixing.)
