Stuffed Pepper Soup: A Classic

   My grandma used to make stuffed peppers a lot when I was growing up, mainly upon my request for my birthday or other special events. It was my favorite dish that she made, and I have also made them before. This time, I wanted to try something different and maybe a bit easier, and this soup was those things!

What you need:

-1 cup rice

-1 jar sauce

-1-2 jars water

-thyme, basil, oregano, parsley to taste

-salt, pepper to taste

-1 clove garlic, olive oil

-500g ground beef

-4 peppers

-1 onion

-1 large can (500g) tomatoes

-1 chicken bouillon cube

What to do:

   1. In pan, cook meat with oil and garlic until brown, and add chopped onion and peppers. Cook until soft. 

   2. Cook rice according to package instructions.

   3. Add meat, veggies, bouillon cube, tomatoes, sauce, and spices to pot and cook 30-45 minutes.

   4. When rice is tender, add to pot.

   This recipe is super easy, but I still made some fatal errors which resulted in my soup becoming a stew! I made two cups rice, which was way too much; I suggest one cup instead. I also will add more water the next time, and cook the soup for a shorter amount of time so that it maintains the soupy consistency. Good luck, and enjoy!
