Every so often I get really tired of having to break out tons of ingredients and pots and pans to make a good dinner–who doesn’t?
This recipe, which really doesn’t have a name, is my fallback for weeks when I am really tired or stressed out.
It is simple, quick and healthy.
What you will need: 1 bag brown rice, enough broccoli to feed you (I usually get a crown per serving if they are large, two if they are medium-sized), and basil pesto sauce (found at Wegman’s).
What you do:
1. Boil water and cook rice to package instructions.
2. Boil water for broccoli.
3. Rinse broccoli thoroughly. Once water is boiling, set broccoli in a colander on top of pot to steam. Put lid on top of colander.
4. Once broccoli is a vibrant green, it’s done.
5. Gently toss about 1 tbsp of the basil pesto sauce (or more–as needed to flavor) in the broccoli.
You can also add chicken or shrimp to this if you are a meat person. (I’m not.)
Although I couldn’t eat this all the time because of boredom, it is a good fallback recipe for once in a while.
