Pasta and fagioli soup in the crock pot

   Love. my. crockpot. If you don’t have one, go get one. I swear, it’s the easiest way to make a dish that will last you all week long! Or if you don’t like eating the same thing for days in a row, you can freeze it and eat it later.

   This pasta and fagioli soup (pasta and bean soup for those non-Italian speakers out there) is easy and delicious, like most crock pot recipes are.

Here is what you need:

-1 large onion

-1 cup celery, 1 cup carrots

-olive oil, garlic

-2 cans red beans

-3 cans (14 oz) vegetable broth

-8 oz tomato sauce

-1 cup chopped tomatoes

-½ cup pasta of your choice

-1 tsp Italian seasoning

-2-3 tsp all spice

-½ tsp red pepper flakes

-2 tbsp balsamic vinegar

-salt and pepper to taste

-Parmesan cheese to sprinkle on top

Here is what you do:

1. Heat olive oil and garlic in pan, and sauté the onion until soft (about 4 minutes). Add the carrots and celery and cook 4 minutes more, then add Italian seasoning, all spice, and red pepper flakes, cooking one more minute.

2. While the veggies are cooking, rinse beans and place in crock pot. Then add vegetables, tomatoes, broth and tomato sauce to crock pot.

3.  Cook pasta to package directions and add to crock pot.

4. Cook for 6 hours on low heat. At 5.5 hours, add salt, pepper, and balsamic vinegar.

   The amounts for the vegetables and spices can vary; put as much or as little as you desire and make this recipe your own!

  Me encanta mi olla de cocimiento lento. Si no se tiene una, que la compre. Le juro, es la manera más fácil para hacer un plato que durará la semana entera. O si no le gusta comer la misma cosa día tras día, se puede congelarlo y comerlo más tarde.

  Esta sopa de pasta y fagioli (o pasta y frijoles para los que no hablan italiano) es fácil y deliciosa, como la mayoría de recetas para la olla de cocimiento lento.

Lo que se necesita:

-una cebolla grande

-apio, zanahorias, tomates

-aceite de oliva, ajo

-2 latas de frijoles rojos

-3 latas de caldo vegetal

-salsa de tomate

-pasta

-aliño italiano, pimienta inglesa, pimienta roja

-sal y pimienta

-vinagre balsámico

-queso parmesano

Lo que se hace:

1. Calienta el aceite de oliva y el ajo en una sartén, y saltea hasta que la cebolla se ablande (aproximadamente 4 minutos). Añade las zanahorias y el apio y cocina por 4 minutos más, entonces añade la pimienta inglesa, el aliño italiano, y la pimienta roja, cocinando un minuto más.

2. Mientras cocinan las verduras, enjuagan los frijoles y ponlos en la olla. Entonces añade las verduras, los tomates, el caldo, y la salsa de tomate.

3. Cocina la pasta según las instrucciones en el paquete y añade a la olla.

4. Cocina la mezcla por 6 horas en fuego bajo. Después de 5.5 horas, añade la sal, la pimienta, y el vinagre balsámico.

  Las cantidades de las verduras y las especias pueden variar; pon tanto como o tan poco como se desea y hace que esta receta sea tuya.
