My latest food obsession…garbanzos

 

   So, when I lived in Barcelona two years ago, my host mom always made dishes with garbanzo beans, and I fell in love with them. When I came home, I failed miserably at making them to eat for myself: I don’t mean I tried and failed, I mean I just never tried.

   The first time I went grocery shopping in Palencia, I bought a jar and resolved to make a dish with them. Yeah, that was four months ago. I finally succeeded in making a dish with them, although it is by no means Spanish.

It a simple pasta dish with a garbanzo sauce, and to make it, you need the following:

-rotini, or whatever pasta you choose to use

-olive oil

-1 small diced onion

-1 can of diced tomatoes

-1 jar/can of garbanzo beans

-½ teaspoon basil

-1 teaspoon sugar

-½ teaspoon oregano

-1 bay leaf

   I will confess that in no way, shape or form, did I measure the amount of basil I used, and I completely skipped the oregano and sugar. But mine still turned out delicious. 🙂

Here’s what you do:

1. Boil water and cook pasta according to package directions.

2. Warm olive oil in pan and add onions. Cook them for about five minutes or until they are soft.

3. Add in beans, tomatoes and basil.

4. Cover and simmer until sauce is at a consistency that you like.

5. Mix pasta and sauce–yum!

   I think I will be making this dish often, as it is easy and has garbanzos…yummy!
