My foray into cooking begins…

   I have decided that in addition to posting movie, book and music reviews and inspirational tidbits, I am going to post the recipes I make with pictures and details!

   I love being healthy and eating healthy, and every Sunday I am going to make two servings of two different dishes for the week, so I have dinners ready to go. It really helps because I am so busy that most days I barely have time to eat something, let alone cook it.

   Yesterday I made Huevos Rancheros, a recipe I found in Women’s Health magazine.

   With the help of a food processor (the greatest invention ever after air conditioning) this takes no longer than 10 minutes at most to make.

   Ingredients you will need: 4 eggs, 4 whole wheat tortillas, one can black beans, one can whole/sliced tomatoes, one onion, and a half cup of fresh cilantro. Other optional ingredients that I am going to try next time are: juice of one lime, one canned chipotle pepper, pinch of cumin and one clove garlic.

   To start, get the onion, tomatoes, and cilantro, chop them into smaller pieces and put them into the food processor. The food processor literally takes six seconds, so be careful not to leave it on for too long or everything will turn to mush! Put all of this into a bowl and mix together. Add black beans to mix.

   Next, warm tortillas on a pan to desired crispiness. Then make sunny side up eggs. This also takes only a few minutes to do.

   This was an easy, quick recipe to make that lasts for up to five days! I made the salsa mix yesterday and the eggs today when I was ready to eat.
