Cooking through the winter: Spanish lentejas

   Here in Spain, lentejas, or lentils in English, are a very popular dish, especially in the cold winter months.

   I haven’t tried a new recipe in quite some time, and as this seemed easy enough, I decided to give it a try. You can put basically anything in your lentils, so I decided to add onion, garlic, carrots, and leeks.

What you do:

1. Chop vegetables and put them in pot with oil and garlic, cooking until soft.

2. Add lentils and water. Water should be three inches above the lentils.

3. Cook on high heat until mixture boils, then reduce to medium heat for 45 minutes to one hour, until there is hardly any water left in the mixture.

   And that’s it!
