Back when I lived in the U.S., I had cereal for breakfast every. single. day. But here in Spain, the cereal options are limited and I was getting bored, so I started looking for new breakfast ideas.
I like this recipe, not only because it is quick and easy, but also because it is filling, as I start teaching again and don’t have as much time to snack.
What you need:
-1-2 eggs
-smoked salmon
-red onion (optional)
-cilantro (optional)
What you do:
1. Whisk eggs and pour them into pan, scrambling until cooked.
2. Put salmon and eggs on whole wheat or multigrain toast.
So basically, I added the red onion and cilantro because I had them lying around. You can add whatever spice/veggie sounds good to you.
